Since I've been eating endlessly out of boredom while in Quarantine and also refuse to go food shopping unless I absolutely HAVE to because I know I'll continue buying unhealthy snacks... I decided to use what I have in my pantry to try and make a HEALTHY quarantine snack that I won't feel guilty about!
My friend sent this recipe my way, but since we have different things in our pantry and don't want to leave the house I decided to modify It a bit to accomodate what I had. So feel free to get crafty with this and use what you already have in your home!
PSA: The almond flour is what makes this gluten- free; so if you don't have that at home, just note that using all-purpose flower will add gluten to the recipe!
GLUTEN FREE Banana Oatmeal Chocolate Chip Cookies:
- 1 cup quick oats
- 3/4 cup almond flour
- 1/2 teaspoons baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 2 tablespoons butter, melted
- 1 egg
- 1/4cup honey
- 1/2 teaspoon of vanilla extract
- 1 teaspoon almond milk
- 1/2 overripe banana
- 3/4 cup of chocolate chips
Convection Oven 350 degrees for 14 mins
Mix wet & dry separate first then mix together!
Makes about 12 decent sized cookies
